I haven’t posted in a week so I thought I would share what I have been up to. First of all, I’ve been sticking to mostly a paleo diet. I’m keeping track of my cheats though because I will owe burpees for them through a challenge at my box. It really keeps me on my toes when I choose to cheat though when I remember I will owe burpees for it – really makes me think whether each cheat is worth it.
I mentioned that the hubs decided to give Crossfit a shot and I am happy to report that he is sticking with it, and I believe he is hooked! He has faithfully been coming 3 times a week and already feels stronger and more comfortable. I love having him there and love sharing my passion with him. Its fun to see him progress week to week and I’m excited to see him push himself and step outside his comfort zone. His biggest hold up has always been his bad back and fear of making it worse with heavy lifting. He has quickly learned that he can modify if something hurts or is uncomfortable BUT that week after week, his back feels better not worse!
Here’s a few things we have been chowing on for the past few weeks.
Veggie/sweet potato mash up. Broccoli slaw, bell peppers, onion, ground chicken cooked in coconut oil and thrown on top of a sweet potato. Yum!
Scrambled eggs and avocado – what more do you need?! (bacon is needed) Lots of broccoli slaw, veggies, fried egg and avocado.
A favorite of mine (the hubs – no so much) is shredded Brussels sprouts with bacon! Salmon and cobia are always a hit too!

Bonsai Sushi is one of my favorite local places to get great sushi and the hubs and I shared a date night there celebrating our “dating” anniversary. 16 years together called for some yummy sushi! Traditional Volcano, Waikiki (has mango on it – yum) and Sexy Man. If you live in the Tampa/Land O Lakes/Wesley Chapel/New Tampa area – make sure to check this place out!
That’s pretty much it. A lot of good eating and a lot of Crossfit – basically my life the past few weeks.
